it’s not actually def bonus, but damage reduction bonus. 5% for 3 parts, + additional 10% for 4 parts. Will also give you +34 hp per attribute level, and +0.3 stamina per attribute level.
I’m planning to do the same thing as well. I have 1k+ evasion with Guardian on, and still getting hit alot.
so no deff bonus value added with 3 or 4 set of plate
only basic deff value from armor
if leather you can have +75 evasion with 4

is it better only wearing plate top and pant, but leather glove and boot??

well I would say it depends on what you are planning.
I’m wearing shade top and bottom, vubbe gloves and roxona boots. 800+ evasion without Guardian and level 50 leather attribute. what I was planning is to be evasion based and at least be able to dodge 80% physical damage and only have to worry about magic, but the new update is hard on evasion it seems.
leather sets usually contains better stats for dps, while plates tend to go for survivability (with the exception of demonas and oghmar). still waiting for a pierce glove, kinda like demonas/oghmar but its probably never gonna happen. lol.
