Not sure about freeze, but sleep and lethargy (i don’t remember if it does actually) doesn’t seem to affect them, burn, bleeding, poison and curses work.
bosses cannot be stunned, frozen, slept or otherwise completely disabled unless stated otherwise (stop’s attribute), but all other status effects work: weapon break, armor break, poisons, bleeds, lethargy, curses and hexes.
There are also some effects that bosses resist with very high probability: reincarnation.
P.S.: thauma’s swell/shrink body skills dont work on bosses either.
