All pets or companions (with exception fo falcon) consume stamina with movement like the character. My class is a SR and my currently pet is the leaf penguin, then if the penguin waste all its stamina, Can it keep moving while I mount it?
Don’t worry if you are a SR, actually I think barely anyone bother with that.
It’s a waste of money to buy food since it’s expensive and when you feed it only recover a bit of it.
And answering your question, it will move the same way as a satisfied one.

You only lose the extra defensive stats a mount gives, like hp,eva,def and mdef
It’s not worth caring anymore.

The food is expensive and it only recover 15 stamina of 600+ , the best way that I found was leveling up and sorry for depress you 
If you have Roxodon, pet food is cheap
You can blame IMC to make things this way for the poor (and I mean the cheap ones) pets.
You can buy the sardine with the 5 tp you get for free each day, and it completely restores your pet stamina
