Now it is a matter of time for me to reach Rank 7 on my first character (Currently Level 222/14 at 20% class) and I think after reaching it it will be the right time chill out and perhaps do something aside from brainlessly quest or whatever for some levels.
My end-game build is the following:

Level to 280 then start to farm to maximise your classes potential with the best gear. I guess then you could step into ET.
Alternative would be make a new character and level up your team level. Also you could farm collectables for the bonus stats.
It’s pretty much a waiting game if you don’t want to do any of that until they release rank 8
Gather the 7 dragon balls. And go farm for your ultimate gear.
I don’t think parties would want me in since I’m not part of the ‘meta classes’ the common mass likes to build.
I’ll make a new character once the game goes on F2P to play with my friends, I still have two weeks for that 
I don’t feel the need to get to lv280 now since as I mentioned, getting to cannoneer is my goal, for now.
Ultimate gear? Could you please give me some examples? I’ll be wearing plate gears with a crossbow and a cannon as weapons
“Ultimate gear” Would probably be Roxona armor, which is essentially one of the best sets you can get before lolopanther armor, which is the best, and is only obtainable from doing earth tower.
Well, is pretty personal what you need to do, you need to do what give you move motivation and fun, so its not fixed, but there lots of things you can do:
Personally I recomend you to get the top equips for your class now. There are numerous ways to gets this equips, by enchancing them, putting gems, buying from another players, completing recipes, maybe rare recipes.
After that you can do anything only for fun, and still be stronger.

I made an alt. I don’t really wanna lvl until R8 classes are out. I just do missions for casual lvling and farm dungeons
The Virtov set is between both, and it’s untradeable.

I already did that throughout my Hunter C3 leveling 
you grind like a madman because there is no more quest around to carry you to 280
I’m not really a solo player but finding a grind party in Alemeth,Evac,Storage is not fun because they always full , grinding spot has been taken and you need to race against other party for mobs
so when I can’t find a grind party, I do something like world boss hunting , rare mat hunting , try to hunt some mobs in adventure journal for exp cards
I don’t mind not getting to max level, the game is not a race after all.
I am by no means a cleric expert, so take what I say with a grain of salt, but Resist Elements is amazing. It is pretty much the main/only reason to go Paladin at all. The class overall needs some tweaks and buffs, but that skill is just outstanding. The boost to defenses is substantial, and the attribute is nothing to scoff at.

I’m not a hat collector, but perhaps it is a good deal to hunt a specific headgear that matches with my outfit.

Leveling my pet is more like a consequence for actually doing stuff ingame, but that’s a good idea. My hoglan is level 163 and my falcon is 140 atm.

My team resolves in two pets and 2 characters . As I mentioned above I’ll start a new char once my friends join during the F2P beta release.
Working on getting your vital attributes to level 100 is more important than anything.
