I’m not sure if there are late game classes that can take better advantage of this (alchemist?). But it feels like my bag is full of 100s of materials that I can do nothing with. I’m hesitant to get rid of them because they might have some use. But at this point I’ve gotten 2 crafting recipes that used 3 out of 80 of one material and 1 of another. It feels like these monster drops are useless when they don’t have much of a use early game.
Afaik you can use random materials to level up gems.
Materials can be used to level up Gems. Most, if not all material-type items give +5 EXP to a Gem. I agree they need some wider use, but there are a lot of recipes that you’ve probably not come across which use these materials.

Mostly material will be use for craft weapon/armor and specific job craft (alchemist,wugushi,etc.)

Sit down (insert), press 3, right click gem you want leveled, right click all of your junk materials … or at least that’s how I’m reading it… and if that’s the question you’re asking.
If you’re talking about the recipes, @DiscKZee was talking about how the materials are supposed to be used for crafting equipment in recipe drops from monsters which are fairly rare drops.

That’s right. Here’s an example of a recipe. You can craft weapons, equipment and cosmetics using these. Press Insert to sit (Rest Mode) then open your Crafting Menu. You can craft the item using the recipe and the materials.
Recipes are uncommon drops but they are the best way to upgrade your gear. You may not know when a high level recipe requires lower level materials, which is the case when you hit Lv 75 and Lv 120 recipes.
