I want Cat 1 for the mount. But i’m not sure if using another skills from pelts or other classes will unmount me. Can you help me?

I suggest you go Impaler 1 or 0, 5 trot, 5 steed charge and rest on earth wave. Steed charge is decent way to move around the map fast for camp setting. The higher level the easier to use.
Murmillo in mount with helm have awkward graphical issues all skills are also unsuable, If you want a mounted squire, these 2 builds are more suited:

I really recommend this one, i solo saalus pretty easy with just a regard horn and lv50 attributes. And its easy to lvl.
