It’s easy to find out because he’s actually using the recolored/color inverted version of the Priest class uniform. As you can see here, the male uniform looks like this:
while the female uniform looks like this:
So, he’s obviously male as the uniform can’t be worn by the other gender because it magically changes its form with your gender (see Oracles skill “Gender Switch” for reference e.g.).
Same goes for the Alchemist Master btw, it’s just harder to see as the male Alchemist is wearing a bag that covers the open chest area with its band/sash/whatever it’s called :
