Is possible to use Dragoon skills mounted on companion?
What of those builds are the best?
1 - Swordsman C2 -> Hoplite C3 -> Doppel -> Dragoon
2 - Swordsman C2 -> Hoplite -> Cataphract C3 -> Dragoon

Your ratio will depends on how you gemm your spears 
Generally, go cata if you want more mobility and a bit less damage. Go with 1 if you want more damage, but less mobility.
Cata is really fun since you can catch up with anyone in pvp.
I think it’s 5str : 2dex
