I know I can use a shield with my crossbow, but things seldom get close enough for that to matter, is there some way to use two at once or up my damage some other way?

and no using carve attack while holding a dagger doesn’t count xD

You should be able to but require a skill to do so with somekind of buff or negative stat cuzz youd do so much damage
