it’s 2 days in a roll, my characters dailies have not reset after 6am, it’s still at 3/3 and 2/2 on salad.

No, the bug just makes it seem like that’s the case.
It’s RNG reset.
It’s a new feature.
Makes it exciting to play because you don’t know if you’re going to get IMCed or not.
